Viticulture and vinification:

White wine from the Cigales (Valladolid) and Segovia area from old vines de Jerez (fine palomino), albillo, huerta del rey (malvar), verdejo and muscat blanc à petits grains,…

This is a field blend and all the grapes have been processed together. Grapes are destemmed and macerated 8 hours with the skins. Fermentation occurs in barriques on the lees with stirring (battonage) for 6 months. Not stabilized, unfined and unfiltered. Therefore the wine can throw some sediments.

6 months 300 lts used barriques (no new oak)

Tasting Notes:

Sight: Subtly dark golden color with light greenish reflections, clean, bright and with a fine, slow-falling tear.

Nose: Intense aroma of ripe white stone fruit, light fairly ripe citrus, slightly ripe white and yellow flowers, herbaceous, aniseed, sweet spices, vanilla, cinnamon stick, balsamic-menthol notes, with hints of hay, creamy and dairy memories such as vanilla custard, smoked and toasted memories of blond tobacco and wood (but that do not overshadow the fruit).

Palate: Fruity flavor, of good freshness, powerful and forceful, with complexity and power at the start, quite dry, medium-high density, notable volume in the mouth, expansive, tasty, creamy, herbaceous, subtly smoked, quite full-bodied and great structure. The passage through the mouth is pleasant, balanced, with medium acidity, round, with some fine liquorice

Food pairing:

Ideal to accompany fish, shellfish, shellfish and light dishes.
