Viticulture and Vinification:
The harvest is carried out manually at the end of October, in 12 Kg boxes, with a double selection of bunch, both in the vineyard and in the winery.
The 15-day alcoholic fermentation and maceration took place in open 225-liter oak barrels with little extraction.
The malolactic fermentation and the aging, in a 225-liters medium toasting used barrel, has lasted 10 months.
Sight: Intense cherry red color.
Nose: The nose is dominated by red fruit on a spicy licorice background.
Palate: persistent, red fruit appears again and notes spicy typical of the Syrah variety.
Sausages, rice, pasta, legumes, roasted or grilled white and red meats and stews not highly seasoned.
