Viticulture and Vinification:
In the vineyard, thanks to tasks such as: green pruning, bunch thinning, maintenance of vegetation cover, low yields per hectare are maintained.
Manual harvest is done in boxes of 12-15 kg.
Grapes are destemmed and macerated 8 hours with the skins. Fermentation takes place in used barriques on the lees with some stirring (battonage) for the following 4 months. Not stabilized, unfined and unfiltered. Therefore the wine can throw some sediments.
Aging: 4 months in used barriques (225 and 300 liters).
Tasting notes:
Sight: bright, clean and intense strawberry color
Nose: highlights the great complexity of aromas, fresh red fruit and floral.
Palate: it is fresh and balanced, with medium acidity and a certain touch of unctuousness and sweetness with vanilla notes.
Serving temperature:
Between 7ºC - 10ºC
