Mabal Rosé 2018
Organic rosé wine from the merlot grape and aged for 1 month on its lees
Viticulture and vinification:
Merlot Rose Wine Organic vineyard of the family, located at 900 meters above sea level in the Aceniche Valley, very well adapted to our terroir. Limestone soil, and day – night temperature difference above 15ºC.
Part of the grape is destemmed, macerated for 3 hours with the skins and pressed gently, and part of the clusters are gently pressed whole, without previous de-stemming, to extract the best must
Natural fermentation from the yeasts present in the skin of the grape during 52 days at 16ºC.
It remains on its fine lees, batonage 4 times a week, for a month until bottled Very light filtration so that in the bottle there is a slight sediment.
In the nose it is delicate. Red fruits and sweet notes are appreciated.
The palate is fresh and full mouth. Good acidity that balances the warm feeling that remains at
the end. Silky palate
Long aftertaste with hints of red fruits, highlighting the pomegranate, which invite you to
blue fish, pasta, rice, grilled vegetables, entrees such as fresh goat cheese with pomegranate jam or cold and warm salads.
