Viticulture and Vinification:
Vineyards:
The vineyards are located in the village of Kortezubi, a little old town in Bizkaia, famous for its prehistoric caves which form a Unesco World Heritage Site. The vineyard soil is composed of calcareous clay.
Viticulture:
Manual harvest, plant cover, biodynamic cultivation and permaculture
Vinification:
It is the product of a manual selection of the best grapes from the best and oldest vineyards on the property. This perfectly expresses the character of both the variety and the terrain.
Fermentation in stainless steel and subsequent aging with a flower veil for approx. 2 months. in old sherry boots of elaboration of fine, which give the wine an excellent complexity and salinity.
Tasting notes:
Marko Loretxoa shows citrus aromas with that veil background and that salinity that transports you directly from north to south, to the sea from both sides of the peninsula in a single gulp. Acidity and salinity is what best defines this txakoli. Guardian Txakoli without a doubt.
