Viticulture and Vinification:
From the beginning, Jordi wants to make organic wines with the aim of obtaining high quality products, respecting the environment. Jordi Llorens works with high altitude soils (around 600 m on average) and cultivating the vine without any chemistry.
In the cellar, the same logic: work, a lot of thought and hygiene; but, above all, without chemicals, not even sulfur; resulting in absolutely splendid wines of depth and straightness.
Atikete is made with Garnacha, Cabernet Sauvignon andMacabeo. Planted on carbonated shale and gypsum soils, between 400 and 600 meters of altitude. It came without D.O. organic and biodynamic agriculture.
Manual harvest, partial de-stemming, 2-week maceration, alcoholic fermentation in large amphorae found with indigenous yeasts Aged for 12 months in oak barrels of 400 l from 2003, others from 2006 of 225 l that help round off the wine without detracting one iota from the prominence of fruit aromas.
Wild fruit, flowers and memories in the bush combine with a fine liqueur, elegantly dressing a firm and delicately spiced body. Wood is intuited, but earth is felt; cherries, ripe black currants and some smoke decorate its aroma.
