Viticulture and Vinification:
From the beginning, Jordi wants to make organic wines with the aim of obtaining high quality products, respecting the environment. Jordi Llorens works with high altitude soils (around 600 m on average) and cultivating the vine without any chemistry.
In the cellar, the same logic: work, a lot of thought and hygiene; but, above all, without chemicals, not even sulfur; resulting in absolutely splendid wines of depth and straightness.
Blan 5.7 is a wine without designation of origin that is made with Macabeo and Parellada planted on carbonated shale soils and calcareous sandstone pebbles at 420 meters of altitude. After the manual harvest, maceration for four days with the skins, alcoholic fermentation with indigenous yeasts and temperature control in big buried amphoras with their lees.
Aging: 6 months in big buried amphoras on its lees
Sight: It may appear cloudy as it is bottled without filtering or clarifying.
Nose: it offers aromas of ripe white fruits with citrus nuances.
Palate: it is silky and refreshing where the pure expression of the fruit is manifested.
