Vines from 40 to 120 years old. 400-690m altitude, Limestone rocks of different types predominate (mountain limestones, dolomitic limestones, etc.), there are also slates, conglomerates and sandstones of siliceous origin in the lower plots.
Manual harvest in boxes of 10kg. Selection in the field and in the winery
Low temperature inox fermentation. Indigenous yeasts.
No enzymes. No synthetic clarifiers. Low dosage of SO2 (26mg/l) to ensure storage in bottle
6 months in oak barrels (French and American) of various volumes.
