Organic and biodynamic viticulture.
Méthode traditionnelle. Elaborated using only the best grapes of our vineyards. It’s one of the gems of our cellar. Bottled in January, it has been ageing during 42 to 48 months in the darkest part of the cellar and it has been disgorged on demand to ensure that it arrives to the consumer in its best conditions. Artisan hands will use all their love and affection to dress the bottles, one by one, making it its hallmark.
Tasting notes
Sight: Pale straw colour, elegant appearance. Rosary of fine bubbles that rise to the surface perfectly aligned.
Nose: It’s long ageing and the yeast autolysis process gives it pastry and brioche aromas. Salty hint.
Palate: Nobel and ripe, but keeping a pleasant acidity that makes it very persistent.
