Handy harvest was done into 12kg boxes with of course the double selection of the bounches at vineyard and winery.We made a viticulture acording to our vineyard situated at 900m, with limestone soil respecting the enviroment and wildlife. Into the winery we made a slow start of the fermentation with low temperatures till the begining of it.
Fermentation and maceration for a total of 15 days during which temperature was controlled oxygenation and frequent pumping over 24 hours. Thirteen months ageing is done in French oak casks, 225l – 300l with médium toasted oak.
Due to not using filtration or clarification could allow small particles to appear in the wine.
