Wine made with Mencia and a small percentage of other autochthonous varieties that are mixed in the vineyard aged for 11 months

Quantity

Viticulture and Vinification:

The grapes come from several plots over 60 years old, planted on lousa (slate) soils. The harvest is manual in boxes with a selection of grapes in the vineyard. Already in the cellar each plot is vinified separately in small open cubes. Some plots are vinified with a 40% stalk and others fully destemmed.

Ferment with native yeasts, macerating for 18 days with gentle manual punching.

Malolactic fermentation is carried out in French oak barrels where it remains for 11 months without any transfer or addition of sulfur.

Tasting notes:

Sight:Bright red color, little layer.

Nose: Very fresh and elegant red with classic aromas, black pepper, red berries, grass.

Palate: shows a lot of wild tannins, spices. Dry finish

Serving temperature:

16ºC - 18ºC

Food pairing:
Game meat, lamb, rabbit and red meat, cured cheeses, sausages and rice with oxtail.
