"Naturally sweet" red wine made with the Monastrell variety grown in "pure dry land".

After natural racking of clusters, vinification with "indigenous yeasts", no sulphites, clarifying agents or filtering are added.

Quantity

Vineyard / soil:

Vineyard located between the towns of Cehegín and Bullas, next to the Quípar river. Dry land head-prune vines. Slimy calcareous soil with edge areas

Elaboration:

Manual harvest the last week of September from the upper part of the vineyard of later maturation. Natural dried of whole bunches, destemmed without crushing. Fermentation in stainless steel tank with its own indigenous yeasts, maceration for 40 days until natural fermentation stop. After pressing and removing the lees, it is placed in a stainless steel tank, where it clarifies and stabilizes naturally. For this reason, it is probable that precipitates may appear in the bottle due to its natural elaboration. Sulfurous (SO2) is not added in any manufacturing process, nor in bottling.

Serving temperature:

Between 10-12ºC

Tasting note:

Sight: deep cherry red, garnet reflections and reddish reflections.

Nose: complex, intense, fruit aromas, ripe fruit, figs and dates.

Palate: powerful, sweet, black fruit, well integrated acidity, long and persistent finish.

Food pairing:  

desserts, chocolate, blue cheeses and cured cheeses.
