Aging on lees in 225 liter oak barrels.

Vineyards of several plots, combining fertile soils with mountain soils. Trellis conduction with support irrigation. Some root-stock vines.
Manual harvest between the first and third week of August. Direct pressing of the bunch, natural settling, fermentation in a stainless steel tank with its own native yeasts, for 7 days. After removing the lees, it is placed in the barrel, where it works with its lees for 2 months, clarifies and stabilizes naturally. For this reason, it is probable that precipitates may appear in the bottle due to its natural elaboration. Sulfurous (SO2) is not added in any manufacturing process, nor in bottling, except for a small amount in pressing.
Aging: Aged in new 225-liter French oak barrels.
