

A sparkling Classic Penedès that combines the typical Champagne Variety, the Pinot Noir, and the xarel.lo vermell, the late-maturing xarel.lo variant, with thick skin and reddish color. A tandem that a priori we could describe as "strange couple".

Organic and biodynamic viticulture.
Méthode traditionnelle
Xarel.lo from the Can Mayol estate itself at 250 meters of altitude, and Pinot Noir from the highest area of Penedès, Pla de Manlleu, at 700 meters of altitude.
Aging for 40 months in stacks
Tasting notes
Sight: Onion skin colour with golden highlights. The long ageing and the manual stirring cause rows of fine and persistent bubbles that when they reach the surface explode forming a light layer of foam.
Nose: Fragrant, with a delicate aroma of violet. The fruit appears in the form of cherry and apple. Smoked and roasted tones round this unique aromatic glass. The complexity of aromas suggest an exciting future for this sparkling wine.
Palate: Elegance in the mouth is guaranteed. A very dry real brut, for lovers of sparkling wines with character.

Rice in broth, marmitako (stew with tuna and potatoes), fish soup and sushi.
