Organic and biodynamic viticulture.
The Pinot Noir comes from Pla de Manlleu, the highest area of the Penedès, at 700m above sea level. Maceration of the whole grape grain during 14 hours. It is subsequently pressed and placed in stainless steel tanks. Fermentation is done at 14°C. The tirage is done by the end of January. The ageing in the bottle is moderate, from 15 months. In this sparkling, fruit and freshness are more important than the ageing aromas.
Tasting notes
Sight: Bright red cherry colour. Bubble fine and elegant forming a perfect crown.
Nose: Clean and elegant with reminiscences of raspberry.
Palate: Fresh and light. Red berries and berries.
Serving temperature
4º to 5ºC

It matches perfectly with all kinds of dishes, specially appetisers, oysters and pasta.
