790 are the days of long waiting, from the harvest that took place the second week of October until the day it was bottled, coinciding with a day resulting from the biodynamic calendar.
Malolactic and alcoholic fermentation in 720-liter clay amphorae.
Aged in 500-liter French oak barrels for 10 months
This wine has not undergone any stabilization process, either physical or chemical. This can produce sediment, but in no case does it alter the quality of the wine.
Sight: Cherry red, with red reflections. High middle layer.
Nose: Ripe or candied black fruit. Forest fruit (blueberries, blueberries, raspberries, plums), with hints of toast (coffee and chocolate) and with a spicy background.
Palate: Structured, with smooth and round tannins, with notes of candied red fruit. Long and pleasant finish, alive.
Stewed meats (wild boar civet, veal with mushrooms, entrecote with pepper); creamy cheeses and dark chocolate.
