The artisan practice is the basis of the elaboration of our wines
The winery was born in 2006 as a fulfillment of the desire to make again the wine that in childhood and youth I made with my father in his winery in La Costereta Borja of Ontinyent among 1946 to 1959. There I learned to make natural wine, which is what was practiced in the area since there were not known the phytosanitary products that today are offered to the market.
In 1998, the family acquired the vineyards located in Almansa-Caudete and Villena, close to the municipal term of La Font de la Figuera and after the observance of the behavior of the same with respect to pests and other external agents, decided to move to ecological viticulture
Over time, cultivation was strengthened by learning through specialization courses on organic cultivation and biodynamic practices, among which the observance of the lunar calendar figures prominently. Trips to France and Italy visiting ecological wineries have served to improve production techniques.
The artisan practice is the basis of the elaboration of our wines. We return to traditional systems by choosing small fermentation cuvettes to avoid temperature rises during fermentation. From here it passes to bigger deposits for the decanting and from these to the destination, either the bottling of young wine or the passage to barrels for its maturation.
